For travel in the Mainland China, the best card is the Discover. The largest credit card network is the China UnionPay. Every store that accepts a credit card accepts China UnionPay card. The Discover has a agreement with the China UnionPay that the Discover Card can use the China UnionPay.

In Mainland China, except the large city like Shanghai and Beijing, only four or five star hotels and luxury stores accpet the visa, mastercard and american express.

Visa and Mastercard are basically the same. When you go to your local restaurants and ask them what they take, they all take Visa and Mastercard. a lot will also say American express and most say Discover.
But there are places that don't take American Express and some don't take Discover.

I've never seen a place that takes Visa but not Mastercard and vise a versa.

they are bank cards started out by Bank of America. Chase had both Visa and Mastercard, there's a union that offers both Visa and Mastercard.

Funny how over the years I cater all my shopping in a manner where all the establishments I go to accept Amex. 90% of the time if they don't take Amex, I don't shop there.

Overall, Visa. However when I'm in a place I'm not sure about, I carry the local currency.

i also carry one of each card when i travel. AMEX Platinum doesn't charge a fee, Capital One doesn't, and for ATM cash withdrawals carry a Citigold card (no fees and direct conversion rate)

Visa's rate to banks is 0.8% without currency conversion, 1.0% with.

It is up to the banks if they want to pass that on.
