Discover: Discover More (5% rotating categories)
Mastercard: Best Buy (4% at best buy), Chase Freedom (5% rotating categories)
American Express: Zync
Unless the amount is very small or there is an established history of monthly charges on the account, I would expect the card issuer to cut you a check fairly quickly. It has been my experience that they don't like to have an account with a positive balance.

Chase: Freedom (only for 5% reward categories, purchases under $10), Sapphire (not in use), Amazon Rewards (for Amazon purchases only)

Discover: More (only for 5% reward categories)
They will get those rewards back too. Sooner or later.
so lets say the balance on the account is $0 and I return a previously purchased item for $40. Instead of the account being credited the 40, they will mail me a check?

That's what I would expect, unless they believe that more charges to your account are imminent, in which case sending a check would be a waste of time, money and effort. If I were you, I would just call them and ask them what their policy on this is.
