Do credit cards always charge interest?

I am going to be getting one of the chase cards to get the bonus points, but want to make sure I am not paying any interest.

Is it possible to make payments the same day you spend the money? If I get $40 in gas, could I then go online and make a $40 payment from my bank account or would i have to wait until the end of the month?

Also after you meed the minimum spend how long should I wait to cut up the card?

I have no interest in using it beyond getting the points. I have A rated credit from my mortgage and old car loans so that shouldn't be an issue. Also not worried about my future credit score either.
