Of course the slow adoption of anti-fraud measures isn't helping. After 18 months, I finally got to use one of my EMV capable cards in a transaction. Unfortunately I had to travel to the UK to do it (I'm there now).
Cards:
American Express Platinum (NPSL)
Penfed Platinum Reward Visa ($28K)
Chase Freedom Visa ($25K)
Fidelity American Express ($20K)
American Express Blue Cash Preferred ($20K)
Bank of America Cash Rewards MasterCard ($20K)

Just got new EMV cards from BoFA (debit and credit). Have no clue where I can use them though.

So far, that's the only bank that has issued them for me.
