Are the lounges worth the hefty annual fees required for these "upper tier" cards?
That's really a personal decision. I used to fly a lot for business and I had a membership to United's lounges because I went a lot of places they had lounges. I still use the lounges when I can but frankly would not pay actual money for it. My membership was free through miles. Similarly, I don't think the access that the platinum card provides is worth very much in fact but I do use it occasionally. Personally I think the airline fee reimbursement, car rental discount and premium programs, and a few other perks are worth more than the priority pass. But if you personally find the lounges valuable and would pay to join then you might place a higher value on the AMEX perk.
Get the Platinum and you will get also Priority Pass access.

I'm a little confused. Do I show my Platinum card when checking in to a airport lounge, or do I have to actually get a Priority Pass card to be able to enter a lounge under the program?

If you have a platinum card you can call and get a "Priority Pass Select" card for free. It gets you in to some international lounges but not many domestic lounges. To get into those you just show your priority pass card.
The platinum card itself gets you into a few airlines' lounges IF you are flying on those airlines the same day. To use those lounges you should have your card and your ticket.
