From my research, the $100 credit should be available on or very shortly after June 1. Your account anniversary date only matters in determining whether your AF is $175 or $195 for your next year. I barely slip in for $175.
It's not a very flexible credit. You can only pick one airline. You can't use it for base airfare - not directly, at least. You should be able to use it for checked bags, in-flight purchases, or lounge access. I'm not sure about gift cards and seat upgrades.
I've asked this before, but not gotten an answer: What happens if a new Platinum cardmember fails to pick an airline for the $200 credit by a certain deadline?
